This grill was designed after a meeting with the client in which the style of cooking and vision for the restaurant were discussed. Hand forged handles and victorian styled detailing on the grill give it its unique visual language and enable it to sit well within the interior design of the victorian pub and restaurant.
The grill was designed in sections to enable its installation into the first floor kitchen. Each section shown above enables the chef to utilise the fire in different ways.
A smoking oven (A) with two access doors and a shouting on and off chimney allow for smoking and slow roasting with multiple shelving levels within.
A racking system (B) on the right hand side allows for cooking directly over the fire at different heights.
The Main fire pit (C) spans across the entire grill and provides generous space to move the fire and manage it as it moves through its various stages.
Finally and most uniquely to this design is section (D) in which a stainless steel drawer and container allow for a whole lamb to be placed inside and slowly cooked overnight for Sunday lunch.
